Bessou’s sake milk punch is a refreshing cocktail balanced by lemon juice, orange juice, and green tea, and arrives garnished with star anise, mint, and pomegranate seeds. Tapestry’s sommelier and beverage director Harsh Dayalani came up with a recipe that uses enough ingredients to make a salad. Junoon’s Hemant Pathak drew inspiration from the resto’s Indian theme to concoct this healthy libation with Domaine de Canton ginger liqueur, lime-infused coconut milk, fresh lemongrass, a green cardamom pod, and some simple syrup. On the first day of spring, March 20, Scarpetta will introduce its Spicy Raspberry Collins to the cocktail menu. A healthy amount of vodka mingles with fresh raspberries, jalapeno, and ginger beer for some easy drinking. 355 W. 14th St., 212-691-0555
Will Elliott’s cocktail creations at Sauvage in Greenpoint draw on an array of artisanal aperitifs. The Bitter Storm Over Ulm, which comprises Aveze Gentian, lemon, macvin, and pear, is one of his most popular tipples.
