It’s National Lobster Day and, to us, the best way to celebrate is with a lobster roll. Here are our recommendations for five lobster rolls that suit a variety of tastes and regional persuasions. Try one this weekend or, better yet, gather a group of friends, go on a lobster roll crawl, and taste them all.

Luke's Lobster
Luke's serves its lobster simply with lemon butter and secret spice in a buttery split-top bun with a swipe of mayonnaise. All of the lobster comes from a sustainable fishery in Maine and is often just hours out of the water. Ed's Lobster Bar
Luke's competitor Ed's won the contest for best New York lobster roll on the Food Network's Food Feuds (judged by chef Michael Symon). Many people attribute its superiority to the fact that Ed's also includes bits of lobster tail in the mix, rather than the usual claw and knuckle meat. 222 Lafayette St., 212-343-3236;

Pearl Oyster Bar
If you're looking for a swankier place to devour a lobster roll, this West Village oyster haunt is a nice bet—but be prepared to wait for a table. Pearl’s lobster roll comes market price on a pillowy bun with a side of shoestring fries. Wash it down with a beer and some fresh oysters. 18 Cornelia St., 212-691-8211;

The Mermaid Inn
Served on a huge, buttered bun from Amy's Bread, The Mermaid Inn's lobster roll may be the largest one in New York. On Mondays, you can get the roll for $20 (regular price is $26), accompanied by Old Bay fries, beer, and chocolate pudding for dessert. 79 MacDougal St., 212-260-0100;

Red Hook Lobster Pound
For a taste of the Pound’s lobster roll, you have three options: the Van Brunt Street location, the weekend booth at the Brooklyn Flea, and the roving Red Hook Lobster Truck.
