
Pizza from Pizza by Certe
How did you spend your Earth Day this past April? Chef Edward Sylvia spent his setting an eco example by introducing Gothamites to Pizza by Certé, New York’s first and only all-green, eco-friendly pizzeria. The LEED goldcertified restaurant uses only recyclable goods, delivers strictly via foot, recycled bicycles or hybrid trucks, and employs only locally sourced ingredients for all its fresh, homemade pastas, sandwiches, soups and pies.
“Most of the ‘fresh’ produce you buy at the store has traveled many miles from farm to supermarket,” says Sylvia. “Traveling that distance requires a lot of fuel, generates greenhouse-gas emissions and takes many days to complete, which means the food isn’t necessarily all that fresh by the time it lands in your grocery store’s produce aisle.” By comparison, Pizza by Certé buys its produce from local New York farmers, and the restaurant even features a green wall that grows its own herbs (irrigated by collected rainwater, no less).
When he’s not serving up slices, this Long Island native enjoys sampling other local cuisines. “I love eating out with my kids and trying new places all over the tristate area,” he says. “I’m a born-and-bred New Yorker and love to give back to the city that helped make me who I am.” 132 E. 56th St., 212-813-2020.
